Challenges
Seems like this week I am really challenging myself in so many ways. One of which is to prepare myself for the walk next weekend. Who would have known a few months ago when I brought my New Balance tennis shoes ( because they were cute...LOL) that I would need them to walk 3 miles. Now three miles may not seem like a lot to you, but for someone who thinks of walking as something I only do when shopping or touring Disney...well lets just say this is going to be a challenge for me. Now to find a cute outfit and I will be ready.
On to challenge number two. OK, so you all know I have been trying to eat more healthy food. That includes making sure I eat breakfast in the morning. This has become a challenge for me. A girl can have so much turkey bacon, whole wheat toast, eggs, etc for so long without going a little crazy. So day before yesterday I though I would try some yogurt, fruit and cereal ( I don't like the taste of milk not to mention the fact that I am lactose intolerant). Well, it tasted awful....not at all like the great yogurt snack I got at the shop in Chicago. Maybe it was the fact that I didn't have blackberries, maybe I used the wrong kind of yogurt. I am not sure what the problem was, it was just nasty. So if anyone has a great recipe for a fruit and yogurt cup please pass it my way. Also if you know a good recipe for an oatmeal bar ( I can't eat oatmeal soft...just have this phobia about certain soft mushy stuff in my mouth ) I will take that recipe also.
Now challenge number three came for me yesterday. I made a great dinner ( well at least according to my husband and oldest daughter). And for the most part I enjoyed it. But as I have stated before I don't like seafood....but since I am trying to add years to my life ( and according to my Real Age Test tuna and salmon is a must ) I caved in and made the salmon. I really wanted to like it, honestly I did. But the whole time I was eating it I kept saying .......this taste like fish! I just couldn't get past that. Of course Marc and Quisha tried to convince me it was all in my head. The only saving grace was the honey mustard sauce. Thank goodness I didn't try to eat it plain because I would not have finished the small piece I did have on my plate. Now Nicki is the same as I....she hates fish with a passion. But on one of our many visits to Disney's Polynesian hotel we ate dinner at our favorite restaurant "Ohana's". On the menu along with the turkey, chicken and steak was ( you guessed it ) Salmon. Well Nicki loved it. My salmon...she didn't like so much. She kept saying she really wanted to like it and she really wanted to eat it but she couldn't because it was different from the salmon at Disney (LOL). So my challenge is to find out what kind of salmon Disney has and then recreate that recipe. So once again if you have a suggestion please pass it on ( or I won't be responsible for what happens to the next piece of salmon that comes through this kitchen).

don't give up on the yogurt!
i eat it every day for breakfast..i need the calcuim and it is healthy/low fat.
buy a few different brands..there is such a difference in taste/texture/tartness..you may just find one to suit you!

I would totally wear those shoes!
V the tartness is what got me and it was plain yogurt. Maybe I should try some with flavor?
